Victoria’s
The Carl Gustaf continues to garner global acclaim, offering one of the French
Caribbean’s finest dining experiences, and served under the culinary direction of Executive Chef Emmanuel Motte. The entire kitchen and dining area was rebuilt in 2008, and Victoria’s debuted as the hotel’s new fine dining restaurant. Using traditional French techniques and influences, Chef Motte creates dishes that use local seafood and produce, as well as products imported from France, the US and South America. With a picturesque setting overlooking the yachts in Gustavia Harbor, Victoria’s has quickly become one of the island’s top fine dining restaurants.
CG Lounge
The Carl Gustaf Lounge next door to Victoria’s is the hotel’s more casual restaurant and a favorite among locals for a sunset cocktail, thanks to its enviable location facing westward overlooking the harbor and setting sun. The CG Lounge’s new small-plate “trilogy†bar menu is a great way to experience Chef Motte’s cuisine in small, sharable plates in a casual setting.
In-Room Dining
Dining or entertaining in the privacy of guests’ suites features St. Barths’ finest
cuisine. Offered 24-hours a day, In-Room Dining menu offers breakfast, lunch, dinner and snacks; and catering for private events. Creative menu selections feature items available exclusively through In-Room Dining, as well as items available in CG Lounge. Staff presents orders with fine china, linen and silver service.
